Usirikaya Pickle - Andhra Style Amla Pickle

There are many ways to pickle Amla (or Usirikaya) in India, but the method used in Andhra and Telangana imparts a unique taste and flavor, deeply rooted in traditional Andhra cuisine. Usirikaya Pickle is made by selecting fresh gooseberries, washing them thoroughly, and drying them to remove any moisture. The gooseberries come in two sizes: the smaller ones and the larger ones, which are nearly the size of a golf ball. While the larger variety is typically used for pickling, the smaller ones can also be used for a slightly different texture and flavor.
